2018 Late Harvest


A warmer than average year, and a fairly light crop due to some frost damage in the previous season.  Honeysuckle and guava aromas, with a clean luscious palate.  Good acidity gives a clean, smooth finish.

ENJOY IT WITH             

Fruit based desserts, but not chocolate.  At its very best with strong cheeses like a good blue or vintage cheddar.

CELLARING                  

Keeps well for 5+ years, becoming spicier.  Oodles of fruit and plenty of acid to keep everything in good shape.

More Information

Sweet, but not too sweet, is how we describe this wine at cellar door.  Luscious fruit on the front of the palate gives way to a clean, fresh finish.  A hint of spice and botrytis marmalade keep things interesting and broadens the appeal of this wine.  Dangerously drinkable.

GROWING                   

Estate grown. We keep a portion of our Sauvignon Blanc back for 2-3 weeks to sweeten up, desiccate and develop some botrytis (how much depends on how much rain we have late in the season).  Our cane pruned Sauvignon Blanc block is on our richest soil, deep and dark, clay loam  over shale.

MAKING                      

Crushed and allowed to sit in the press overnight.  This allows the more raisined berries to release their sugar and flavours.  Pressed to tank.  Wild ferment allowed to proceed on unclarified juice with cooling.  Fermentation chilled to stop fermentation and retain residual sugar.  Sterile filtered and bottled with minimal sulphites.
